Horseradish is a perennial vegetable that thrives in no-till, wood chip garden growing conditions. These are horseradish cuttings which are a living vegetable root sock, not a tiny seed.  Plant the root cutting at a 45-degree angle, with the top of the cutting 2 inches below the soil line. One plant is usually plenty for a family. Description. Horseradish is a hardy perennial grown for its pungent roots which are long and narrow, sometimes to 2 feet (.6m) long. Grow horseradish as an annual, in the second year the roots can become tough and fibrous. Horseradish is best grown in containers; it spreads readily and can easily grow out of control. Horseradish will be ready for harvest 140 to 160 days after planting.  Harvest all roots before the ground freezes otherwise new plants will spring up the following year. Horseradish is mostly used as a condiment. It's typically consumed as prepared horseradish, which is made from the grated root, plus vinegar, sugar, and salt. Horseradish sauce, another popular garnish, adds sour cream or mayo to the mix. These condiments are usually served in small amounts with meat or fish but are also delicious with plant-based dishes like veggie sandwiches.
